Chicken Fajitas

Ingredients:

  • 1 pound boneless, skinless chicken breasts, thinly sliced

  • 1 large bell pepper (any color), thinly sliced

  • 1 large onion, thinly sliced

  • 2 tablespoons oil

  • 4 teaspoons South of the Border seasoning

  • Additional salt and pepper to taste

  • Juice of 1 lime

  • 8 small flour tortillas

  • Optional toppings: sour cream, salsa, guacamole, shredded cheese, chopped cilantro

Instructions:

  1. Prepare the Chicken:

  2. Sauté the Vegetables:

    • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

    • Add sliced onions and bell peppers to the skillet. Sauté for 3-5 minutes or until the vegetables are tender-crisp. Remove them from the skillet and set aside.

  3. Cook the Chicken:

    • In the same skillet, add the remaining 1 tablespoon of oil. Add the seasoned chicken slices and cook for 5-7 minutes or until the chicken is cooked through and slightly browned.

  4. Combine and Finish:

    • Add the sautéed vegetables back to the skillet with the cooked chicken. Stir to combine and let it cook for an additional 2-3 minutes to allow the flavors to meld.

    • Squeeze the juice of one lime over the mixture and give it a final toss.

  5. Serve:

    • Warm the flour tortillas according to the package instructions.

    • Spoon the chicken and vegetable mixture onto each tortilla.

    • Add your favorite toppings such as sour cream, salsa, guacamole, shredded cheese, and chopped cilantro.

  6. Enjoy:

    • Roll up the tortillas, and your chicken fajitas are ready to be enjoyed!
