Kale Caesar w/ Krispy Q’s
Ingredients:
For the Salad:
1 bunch of kale, stems removed and leaves chopped
1 cup Krispy Q’s
1/2 cup shaved Parmesan cheese
Lemon wedges for garnish
For the Caesar Dressing:
1/2 cup mayonnaise
2 tablespoons grated Parmesan cheese
1 tablespoon Dijon mustard
2 cloves garlic, minced
2 anchovy fillets, minced (optional, for traditional Caesar flavor)
2 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
Salt and black pepper to taste
Instructions:
Prepare the Caesar Dressing:
In a bowl, whisk together mayonnaise, grated Parmesan cheese, Dijon mustard, minced garlic, anchovy fillets (if using), fresh lemon juice, Worcestershire, salt, and black pepper.
Adjust the seasoning to taste. You can add more lemon juice or salt if needed.
Assemble the Kale Caesar Salad:
In a large bowl, massage the chopped kale with a bit of the Caesar dressing to soften the leaves.
Drizzle the remaining Caesar dressing over the salad and toss everything together until well combined.
Top the salad with Krispy Q’s and Parmesan cheese.
Garnish with lemon wedges if desired.
